Jasmine tea has nine grades, and then there are broken tea and sliced tea. Tea is the latter. Fragrant flower tea is different from mixed flower tea. There may be some uncleaned petals in flower tea, and the higher the grade, the fewer residual petals there should be. Jasmine is a flower with temperament, that is, the flowers fully exhale their fragrance during the opening process, while the petals after opening have no fragrance at all. When smelling the flowers, a layer of tea leaves and a layer of flowers should have a fragrance. After smelling the fragrance, a new batch of flowers should be subjected to a second fragrance. The tea continuously absorbs the fragrance during this process, the more fragrance, the stronger the fragrance. Seven kinds of fragrant flower tea is equivalent to seven times the concentrated flower fragrance. However, since the opened flowers have lost any fragrance, flower tea needs to remove the remaining petals as much as possible to avoid the bad taste of the petals that have lost their fragrance. Mixed flower tea, on the other hand, mixes dried flowers and tea leaves together and brews them at the same time. The release of fragrance does not depend on physical flowering, which is more suitable for making mixed flower tea. Temperamental flowers can still retain their fragrance after drying. When brewing, the floral fragrance and tea fragrance will be released together, so there is no need to pick up the petals.
Jasmine tea uses high-quality roasted green tea as raw material, and uses the principle that tea leaves are easy to absorb fragrance to layer jasmine flowers and tea embryos. After the tea absorbs the floral fragrance, another batch of flowers is changed. Repeat at least four times. This process is called “Xunhua”. “Yin” is a polysyllabic word. When read as yin, it refers to the buzzing sound in the cellar, and later it is extended to mean the basement; when it is read as xun, it specifically refers to the process of making flower tea exude fragrance (the same as “smoking”). More importantly, some people will think that jasmine green tea is a little bitter because the aromatic substances in flowers and green tea are a little astringent. If it is not brewed well, if it is brewed for too long, it will be bitter, and it can even be drunk after cooling, but jasmine tea is different.
